How do I remove tree sap without scratching the paint?

Soften it first - a damp microfibre held on the spot for a minute, or a dedicated sap remover. Never scrape or rub at hardened sap dry, because you will drag it across the clear coat and leave scratches worse than the sap.

Can etching from bird droppings be polished out?

Usually, if it is caught reasonably early. Light etching sits in the top of the clear coat and machine polishing removes it. Deep etching that has gone through to the base coat cannot be polished out.

Is it worth detailing a car that parks under trees?

Yes, arguably more than a garaged car - it is under constant attack. Protection is what makes the ongoing maintenance manageable rather than a losing battle.
